ISO 22000:2018 — Food safety (HACCP principles)
One of those indicators, the importance of which is equally important for both the manufacturer and the consumer, is the safety of food products. Compliance with the requirements for food production has always been not easy, but it was not always strict control over it.
From 2015, the requirement for the mandatory application of the principles of HACCP for the production of safe products is in force in Ukraine, certification of food safety is confirmed by certified auditors. Producers are given a term of 2-5 years, and since 2017 inspections by the authorized state body have begun, in the case of non-compliance with the requirements administrative punishment with a substantial penalty and the prohibition of production and sale.
Voluntary certification is carried out after the introduction of the ISO 22000:2018 — Food Safety Management Systems. The basis of the system is the principles of the HACCP standard (HACCP — Hazard Analysis and Critical Control Point) and the development of the Codex Alimentarius Commission. The standard managed to integrate the HACCP system and the quality management system, that is, the best food standard is international in nature and can be implemented at any enterprise.

Why has the HACCP standard been identified by the ISO as the best basis for the new system? There was no decent competition for HACCP, as there was no sense to multiply analogues of food standards. The first version appeared in the US in 1960, followed by a period of long-term development, and the final version was released in 1996.
Soon after the release, the standard became widespread in neighboring countries, and then in Europe. That is, the need to bring HACCP to the possibility of using countries with different production principles has become increasingly clear, and in 2005, the International Organization for Standardization issued ISO 22000, a standard that used essential principles for the quality and safety of food products, and built a flexible management system for application in any enterprise, new edition of the standard — ISO 22000:2018.
